In developing a reduced sodium cheese, we knew in our heart and soul, there was no point in putting a cheese on the market that didn’t taste good, relates John Brody of Sargento R&D. We reduced the sodium in our cheeses by 25 percent without using salt replacers or flavor masking, so you still get all the flavor you’d expect.
